Easy Microwave Caramel Corn
This easy caramel corn recipe puts a time-saving twist on classic caramel corn with a little help from our friend, the microwave.

In 4-quart microwave-safe glass bowl, microwave butter on HIGH until melted, about 45 seconds. Stir in brown sugar and corn syrup. Microwave on HIGH until mixture boils, 1 to 3 minutes, stirring once. Microwave on HIGH 3 minutes without stirring. Stir in soda and vanilla. Stir in 10 cups popped popcorn (REMOVE any unpopped kernels) and mix well. Microwave on 70% POWER 1 minute. Remove and stir. Microwave on 70% POWER for another 1 minute. Remove from oven; stir again to coat popcorn evenly. Cool completely on cookie sheet. Break apart.
